Pasta with anchovies
A simple and cheap dish but full of taste.
Pasta with anchovies recipe for 4 people.
Ingredients:
- 600 gr of anchovies or small anchovies
- 150 gr of pecorino cheese
- Chopped parsley
- 2 cloves of garlic
- Extra virgin olive oil
- Salt
- Black pepper
- 400 gr of noodles
Preparation :
- Let’s start with the anchovies first, cleaning them, removing the head and the bones.
- After cleaning the anchovies, fry the garlic and parsley in a pan with a little oil.
- Add the anchovies and a pinch of salt and pepper to flavor.
- Take half a ladle of the cooking water, where in the meantime you will have boiled the spaghetti, and add it to the anchovy sauce, allowing it to cook until evaporated.
- Once ready, drain the spaghetti al dente, toss with the anchovy sauce and a final grated pecorino cheese.
- Ready to serve at the table.
