Scrippelle 'mbusse

A typical recipe of the Teramo area is that of Scrippelle ‘mbusse, a typical pasta similar to thin crepes, prepared with flour, water and eggs, soaked (in dialect “‘ mbusse”) with broth.

Scrippelle ‘mbusse recipe for 6 people.

Ingredients:

  • 1 egg per person (6 eggs)
  • 400 gr of beef brisket
  • 400 gr beef muscle
  • 1 turkey wing
  • 1 ox knee bone
  • 2 tablespoons of flour for each egg
  • Celery
  • Parsley
  • Half an onion
  • 1 parmesan rind
  • 1 carrot
  • Parmesan as required
  • Salt as needed

Preparation :

  1. Let’s start by preparing the scrippelle. Mix the eggs and flour and dilute each egg with a glass of water until the dough is smooth and homogeneous.
  2. Heat a pan with oil, then with the help of a ladle gradually pour the mixture in order to obtain thin and light scrippelle. Cook over low heat and once ready let them cool.
  3. Prepare the scrippelle, let’s start preparing the broth. Combine the meats and boil them for about two hours together with the herbs. Once ready, before serving it with the scrippelle, pass the broth through a sieve to obtain a smooth broth without residues of meat or odors.
  4. Roll up the scrippelle, place them on the plate and finally pour the broth on top or alternatively you can also decide to bring the broth in a separate pot, so that everyone can choose the desired quantity.
